The White Owl Bistro - Chefs Rene and Laura Dubois

I am so honoured to have the opportunity to write about this very special Northern Ontario business, that lies on the shores of Lake Nipissing; The White Owl Bistro, with its talented owners and dynamic duo, Chefs' Rene and Laura Dubois. But this is more than just a 'business,' this is truly a lifestyle for these two Chefs and owners in their trailblazing operation in the North; located in North Bay, ON. For those fortunate enough to reside in North Bay, The White Owl Bistro is a treasure, offering a wide range of traditional fare with a main focus on 'Farm-to-table' cuisine. Both classically trained Chefs, Rene and Laura built the foundation of their cuisine on the classic French principles of cooking. The taste and quality of the dishes that can be boasted of The White Owl Bistro are, without exception, due to an emphasis on seasonal, local, fresh and healthy ingredients. As farm-to-table Chefs and business owners, both Rene and Laura are "huge supporters of our local farmers and producers here in the North."
Arriving upon the exterior of The White Owl Bistro you feel a sense of nostalgia, as you get a taste of what awaits you inside; as the original building, built in 1934, still features much of its vintage charm. The White Owl Bistro was originally built as a confectionary and small diner that was famous for serving the locals a tasty breakfast, sandwiches, and the largest ice cream cones in ‘the Bay.' Laura even remembers visiting the original White Owl "all the time as a young child," before moving with her family, from the area, to Toronto. Today, for The White Owl Bistro, boring or bland are not words to describe this quaint space, inside or out. It has its own unique vibe, from its bold colour palette to its old-style meets new charm, and hints of French countryside flare. Walking through the entrance of The White Owl Bistro leads you into an intimate and cozy dining atmosphere, hosting 40 seats. Beyond the dining room and through the picturesque lakefront windows you get a stunning view of Lake Nipissing, preceded by, arguably, North Bay's best lakefront patio. The White Owl Bistro offers the type of setting for an intimate dinner for two, a casual get together with a few or many; while also offering that relaxing and peaceful experience for those who choose to dine solo, with a glass of fine wine and a good book.

A Restaurant and a History
With a stunning history, as far as the history of a building goes - through its phases in time, The White Owl Bistro is no exception. Having its origin as a confectionary, it transpired into a breakfast and lunch venue when new owners of the Sunset Inn Hotel took ownership in 2003 and renovated into the now 40 seat space. It was at this same time that Rene, who originates from Sturgeon Falls, would plant his feet solidly on the foundation of these grounds. Rene having graduated only a few short years earlier from the Culinary Arts program at Canadore College [where he met Laura], was hired as the Head breakfast and lunch Chef. It was only a matter of time before Rene would prove himself to be the Chef he is and, under the blessing of the owners of that time, was given the opportunity to turn the 'White Owl' into a dinner establishment. Laura, upon life growing up in Toronto, returned to her hometown of North Bay in 1998 - enrolled as a culinary arts student; later graduating, hand-in-hand along-side Rene in 2000. Laura came to the White Owl to join Rene until, together, they took over ownership of the property in 2006; when opportunity arose.

Both Rene and Laura vowed to "continue the tradition of satisfying local patrons with great food," while also capturing the hearts of those passing through the area. The White Owl Bistro truly is a destination stop and a local feature to be proud of! Through their 40 seat dining space, they are able to offer lunch service and dinner service, as well as their famous Sunday Brunch - that serves up an all-time favourite; Eggs Benny with real Hollandaise sauce. The dining room is also able to host a variety of groups and parties; from anniversaries, to birthdays, to special events like wedding dinners, of up to 40 guests. In addition, The White Owl Bistro also offers a variety of special event dinners for, Valentine's, Mother's Day, Father's Day, New Year's Eve and an annual Spring equinox - maple celebration and local Fall harvest dinner. If that wasn't enough already, Chefs Rene and Laura also offer a wide range of catering services to meet all types of needs and requests, both in house and off site.

The Early Years
Meeting for the first time in College, over a shared passion for food and the craft of cooking, Laura and Rene developed an undeniable bond; and graduating together as Culinary sweethearts they have been together ever since, and going strong! This union has brought them three wonderful children who share in their passion and the healthy lifestyle they have created for themselves, and in raising their children. They are partners in life, in business and in farming, where on their own family run farm, 'Somewoods Farms,' they ethically raise a variety of livestock and produce, for their farm-to-table endeavour. They are a true inspiration, not only to the industry of food and cuisine but to a healthy, balanced and nourishing lifestyle. These two do everything together as a team, and as Rene says, "it is our passion." This is not a duo who likes to get comfortable in one place or one area of expertise. They are always pushing the box forward, ever growing and expanding on their repertoire; trailblazing for the generations that follow, setting a path and inspiring the minds of young chefs who get into the culinary industry for the same desires and passion.

Pioneering Locavores
After having their children, Laura and Rene came to the realization that they wanted to provide for their family the healthiest and most natural lifestyle they could. They understood the importance that good food has on good health. They also wanted to provide a unique experience and environment for which to interact with their children every day; and for their children to learn of the quickly fading skills - as are acquired in a farming life, through taking care of livestock and growing food. Somewood Farms, as they named it, is their family farm, located in Powassan/Chisholm Twp. After watching some popular food documentaries and reading a few books highlighting the dark cloud over the food production industries, Laura was on a mission, researching further into the idea of self-sustainability and farm-to-table production. It was no easy task, and at a time where it was not a trendy or highly sought-after desire of patrons, she really had her work cut out for her. Through her diligence and efforts, along with Rene's support, they were able to forge their way into new territory, pioneering the way in Northern Ontario, and reviving a practice almost-forgotten. As Rene would say, "we are always trying to make ourselves better," and so it would seem a naturally guided direction that the duo would venture into.

Then began the gradual process of connecting with local sources. First, they began to incorporate fresh produce into their menu wherever they could; then by their local meat suppliers. It was then on to having an almost entirely locally sourced offering, over many connections with local famers and producers. It would take tons of planning, coordinating, patience, and determination to connect and solidify trusting relationships with all their suppliers. It was during the beginning of this process that the Dubois family found their dream home and acreage, spanning 50 acres of land for which they could forage, grow, and raise their children and livestock. The dream of growing their own food, to fill both their own home kitchen, and also offer the same quality product to their patrons, became a reality. This ever-expanding venture would be a far cry from the practices both Dubois' were taught in the late 90's culinary application that, "the world is your oyster - meaning it was common practice of that time to reach far and wide for your products." Times have certainly changed! Although in the beginning, it did, as Rene said, "take a while for patrons to catch on to the value of locally sourced ingredients," but perseverance paid off and the upward trend has garnered a now overwhelmingly positive response. All products used by The White Owl Bistro are properly inspected and regulated; meeting the highest standards. With more and more local food and eating events popping up all the time, there truly is an appreciation now for what these Chefs’ have poured their heart and souls into for so many years. One of such events is the 'Feast on the Farm' event, held annually at Leisure Farms in Sturgeon Falls ON. The White Owl Bistro is also a certified member of 'Feast On.'
Laura and Rene are avid supporters and regulars of the local Farmer's Market venue in North Bay, where they can interact with likeminded people; and although with the undertone of a business trip "their attendance is also a social pleasure." They are huge proponents to keeping money circulating within the community, where a sense of community, connection and neighbourliness is a virtue.

It seems this story is as ever-unfolding as the ventures of these two Chefs. Enjoying the benefits of fresh products, and in their spare time [and I'm sure we can hear them laugh a little right now] undertaking the extraordinary task of a homesteading and farm life, both Dubois', who grew up around a passion for cooking, stemming through the generations of their own families, passed down to each of them; are now passing down their knowledge to their own children. Creating a homesteading/farm life, Laura says, "was a way for us to immerse ourselves into the whole experience," and encapsulating a way of living they dreamed of, where they now live "a very satisfying and enjoyable life with our children, animals, plants and restaurant" - Rene.

Operating on seasonal availability, the Chefs’ are able to adjust their menus according to the changes of the seasons, Rene says of "keeping a main component to the dish, through the protein, and adjusting the sides. You can taste the extraordinary difference in fresh food, to commercial food." Showcasing their unique culinary flare, through The White Owl Bistro, both Rene and Laura are undoubtedly two jewels of the local Culinary Arts program; as full-time parents, full-time farmers and full-time restauranteurs, who have put their passion into motion. The menu at The White Owl Bistro is specially designed to meet every palette, including for those who favour seafood dishes; where they offer a fan favourite, 'Seafood Cannelloni' with a roasted, garlic-buttered Canadian lobster tail, sourced from the East Coast. Through their vigour and determination to provide only the best to the community of North Bay, Rene and Laura are able to offer something for everyone at The White Owl Bistro! And as they would certainly say, "we couldn't do it without the support of our community, family, and friends...and some very amazing staff!" |

I had the pleasure of working at The White Owl Bistro in my early years, as a young Chef in training; having apprenticed under both Chefs' Rene and Laura. As far as new and aspiring Chefs to the industry goes, you could not ask for a better place to, not only hone your craft in culinary artistry, but learn valuable and practical skills that so often today you would not be exposed to. Besides having the innate heart-of-a-chef, it was through my experience at The White Owl Bistro, and watching these two young Chefs aspire to make it in this industry that, they would fan my own spark and ever- evolving desire to make a career out of this rewarding industry. So I wholly and truly thank them for for all their efforts in this industry, particularly for carving out a special niche in the Northern map of Ontario; and for their role in encouraging my own endeavours in this most satisfying industry. - Tanya
